This is a Two Recipes re-do.  Lemon pasta, a personal favorite of mine, was one of the first things I posted on my site.  Back then it was just about talking food–what I ate, what it tasted like, and then sometimes just random information about my day.

But back then I didn’t take many pictures and I didn’t post recipes.  I learned the hard way about the recipes when a friend of mine tried to make my Spicy Cajun Pasta and put over a tablespoon of cayenne pepper in the sauce because I didn’t specify how much was “enough.”  I realized that for the select few that read this, I have a responsibility to provide some sort of guidance, even if it’s not perfect.

Start with your ingredients.  I made this while home, another Texas recipe, so I had the luxury of prepping everything before hand because my parents have counter tops for days.

You’ll need: garlic, half an onion, spinach, lemon zest, lemon juice, half and half or cream, and a glass of wine to keep you company.  Also, olive oil.  Does that go without saying at this point?

Heat the olive oil in a large pan and add the onion.
Let that cook for about 5 minutes, until the onions are nice and soft, then add the garlic and lemon zest and cook for one minute more.  Season with salt and pepper.

Let that bubble up, then reduce the heat and let it cook until slightly thickened.

Meanwhile, you’ve been boiling pasta, right?  Right.  Cook according to package directions, then reserve some of the cooking water and drain.  Add the pasta and a couple handfuls of spinach right into the lemon cream sauce and toss to combine.  You can add a splash of the cooking water if it needs to be thinned out.

The spinach will wilt into the pasta and the pasta strands should be evenly coated in that lovely, lemony sauce.
Serve with Parmesan cheese on top.  We ate our pasta with some balsamic roasted mushrooms, a green salad, and crusty bread for good measure.
The sauce is delightfully tart but not bracingly so.  The creaminess tames the tartness a bit and the result is a silky, light-tasting dish that is easy to throw together yet looks and tastes delicious.
You could add some grilled lemon chicken or spicy Italian sausage to the mix if you are the type of person who needs meat on their dinner plate, or you could serve as is.  It’s a stand alone dish that’s filling yet refreshing.
If I were by myself in Boston, I would have served this in a bowl accompanied by some quality TV, like Homeland or The Bachelor.  It’s funny because they’re nothing alike.  It’s sad because it’s true.  I watch The Bachelor.  But since I was home, and my dad was my sous chef, we added a teensy sprinkling of pancetta on top.

  • 1 pound spaghetti or linguine
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 3 lemons, juiced and zested (should yield about 1/2 cup lemon juice)
  • 2 tablespoons olive oil
  • 1/2 cup half and half or heavy cream (I used fat free half and half)
  • 2 handfuls fresh spinach (or arugula if you have it!  that’s my preference)
  • salt and pepper
  • Parmesan cheese for serving


  1. Bring a large pot of salted water to a boil.  Cook pasta according to package directions.  Reserve some of the cooking liquid and drain pasta with about 1 minute left in the cooking time.
  2. Meanwhile, heat olive oil in a large skillet over medium heat.  Add onion and cook until soft, about 5 minutes.  Add garlic and lemon zest and cook 1 minute more.  Season with salt and pepper then add lemon juice and half and half.  Let this bubble up, then reduce heat to low and let thicken, about 10 minutes.
  3. When pasta is done add directly to the sauce.  Add spinach and toss to combine until pasta is completely coated in sauce and finished cooking, and spinach has wilted.  Splash in a little reserved cooking liquid if the sauce needs thinning.  Taste and adjust seasonings if needed.
  4. Grate some Parmesan cheese on top and serve in warmed bowls or with a green salad and crusty bread on the side.

Creamy Crunchy Broccoli Slaw


Yesterday I spent the better part of my day at the laundromat.  That is not to say I hated it, I kind of like going to the laundromat; I like the efficiency of being able to finish 6 (yes, 6) loads of laundry in 2 hours.  I like the low rumble of the machines.  And I like being able to sit and read a good book while I’m being “productive.”
See, doing laundry isn’t that bad.  It’s the after-laundry that I’m not a fan of.  I hate, hate, hate, putting clothes away.  I always have, I always will, which is why I usually live out of my laundry bag for a couple of days before I actually, grudgingly, get around to doing that dreaded chore.  Sorry, but that’s real life.

So yesterday, when I got home with my two giant, full laundry bags of clean, sorted, folded clothes, I surprised myself.  I immediately, without even thinking about sitting down, took out said clean clothes and put them away.  All of them.  Even the hanging ones.

Mom, are you reading this?  Is this what you’ve always talked about when you say “you should keep your clothes nice?”  I get it now!

This salad is kind of like me putting my clothes away–it takes just a little bit of work, but not more than 30 minutes, and the pay off is a well balanced, delicious dish, or in the other case, a clean apartment and unwrinkled clothes.  This metaphor is starting to break down.

This slaw is a little bit of chopping, a little bit of mixing, and a whole lot of crunch.  Start with two heads of broccoli.
Cut those into small florets, discarding the stems or saving them for a broccoli soup or vegetable broth.  Then, cut the florets into slices, which seems tedious and may take a while, but is crucial to the overall texture of the slaw.  We’re looking for uniform crunch.  Add your sliced broccoli to a large bowl, then add about a cup of shredded carrots.
I got those at Trader Joe’s and they were long and a little thick and very, very crunchy.  I loved them, but any shredded carrots will do.

Meanwhile, in a dry skillet over medium heat, toast some slivered almonds until they smell toasty and are a light golden brown.  Careful now, they’ll burn!
Throw the toasted almonds into the broccoli and carrots, then add some dried cranberries.  Chop up about 1/4 cup of fresh basil and add that too.
That’s your salad, now you need dressing.  In a bowl, combine 1/4 cup light mayonnaise with 1/4 cup fat free sour cream.
To that, add the zest and juice of one lemon, 1/2 a small shallot, minced very fine, and salt and pepper.  Stir well, then pour it over the slaw mixture.
Toss it all together until it is well combined and the dressing is well distributed.
Serve this as a side dish to take to a picnic, a potluck, or eat it alongside some broiled fish, as I did.  It’s the perfect alternative to your everyday cole slaw, and with all that raw broccoli, it’s packed full of nutrition.
This is crunchy, crunchy, crunchy.  From the broccoli to the carrots to the almonds–if you’re craving a crunch, this is it.  The dressing gives it a smooth creaminess and a nice bite with the lemon and shallot without being completely overwhelming.  All that crunch and tartness is mellowed by the unexpected burst of sweetness from the dried cranberries.  It’s a symphony of balance, and makes me long for summer.

  1. In a large bowl, add broccoli and carrots.  Meanwhile, toast almonds until fragrant and lightly golden.  Add almonds, cranberries and chopped basil.  Toss to combine.
  2. In a separate, smaller bowl, combine mayo, sour cream, lemon zest, lemon juice, shallot and salt and pepper.  Mix well to combine, then pour over salad.
  3. Toss well so that dressing evenly coats salad.  Serve as a side dish to fish, chicken, steak–whatever you like!

Caramelized Onion and Goat Cheese Fritatta


So it’s only Wednesday but if you’re like me that means that you’re already looking towards and planning for the weekend.  I love Wednesdays because that means 1) I get to play trivia (like clockwork, every single week.  It’s my routine and I’m sticking to it), and 2) Friday and all it’s Friday Fun is only 48 hours away.

And then it’s Saturday!  Do you feel like I’m teaching you the days of the week?  Sorry.

You know what’s great on Saturdays and Sundays, though?  Brunch.  I think it would probably be great on any day, but for some reason it’s only acceptable to drink vodka before noon on the weekend.  I think it has something to do with work.  Whatever.

Here’s an idea!  Have brunch at your house!  Whip up some screwdrivers or mimosas, invite some friends over, and make this fritatta because it has goat cheese in it and that is your right.

First, I heated a oven-proof skillet over medium heat with some olive oil and butter in it.  I sliced up some onions and added them to the hot pan.

I reduced the heat to low and cooked these for about 30-45 minutes.  The onions got all sweet and friendly.

Meanwhile, in a bowl, I whipped up 6 eggs, some light cream, some chopped rosemary, and some salt and pepper.  I poured the egg mixture all over the onions and let it set for about 4 minutes.

While that was sitting, I dotted the top with goat cheese.

After four minutes, I transferred the whole skillet to a very hot, preheated oven and cooked for about 12-14 minutes more, until the top no longer jiggled.


See how the edges get a little caramelized themselves?  Yum.

I let it cool for a little while, then I ran a spatula around the edges, cut it into sections, and ate it!


So my pieces weren’t perfect.  Don’t worry, your friends won’t mind.  Just remind them of the goat cheese and all will be well.

This fritatta had a sweetness from the onions and a creaminess and tang from the goat cheese.  I loved the semi-toasted edges of the fritatta as well.   This would be perfect for a brunch and was fairly low maintenance to make.  Serve with a brunchy drink and do not think about Monday.  DON’T.  I’m serious.

Caramelized Onion and Goat Cheese Fritatta



  • 2 medium yellow onions, sliced into half-rings
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 6 eggs
  • 2 tablespoons light cream (or heavy cream, or milk, whatever dude)
  • 1 teaspoon chopped rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 ounces of soft goat cheese


  1. Preheat oven to 450 degrees
  2. In a large, oven proof, heavy skillet, heat olive oil and butter over medium heat.  Add the onions and reduce heat to low.  Cook, stirring occasionally, for 30-45 minutes, until onions are soft and caramelized
  3. In a bowl, whip eggs, light cream, rosemary, and salt and pepper.  Pour mixture over onions and let sit for about 4 minutes, until you think the bottom of the eggs is set.
  4. Dot the top of the fritatta with goat cheese and transfer to the oven.  Cook for about 12-14 minutes, or until the top no longer jiggles and the edges are slightly caramelized.
  5. Let cool for at least 5 minutes, maybe even more, then run a spatula around the outside to loosen edges.  Cut into pieces and serve!

The dressing is a mayonnaise based mixture, to which I added some curry powder and course ground mustard.  I whisked that until combined, then I added some chopped toasted pecans and chopped scallions.

Crispy Quesadilla Burgers



  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Tortillas
  • Toppings:
    • Sour Cream
    • Guacamole
    • Shredded cheese
    • Sliced onions
    • Sliced tomatoes
    • Pickled Jalapenos
    • Pico de Gallo
    • Any combination of the above!


  1. In a medium bowl, gently mix together the ground beef, taco seasoning, garlic, cumin, cayenne, salt and pepper.  Do not over mix or your burgers will be tough!  Form the burgers into thin patties (or however you like your burgers…for this I wanted them thin because they were going inside a tortilla)
  2. Heat a large skillet over medium heat.  Spray some cooking spray then add burgers, cooking for about 3 minutes on each side (for thinner patties).  Make sure the heat is high enough to get a good sear on each side.  Transfer cooked burgers to a plate.  Wipe most of the grease out of the pan and then spray with a little more cooking spray.
  3. Assemble your burger: Cut a tortilla to size then add sour cream.  Add the burger and top with your desired toppings.  Fold the tortilla over (or top with another, small tortilla).  Cook the entire thing in the pan on one side for about 2-3 minutes, until it is very crispy and golden brown.  Carefully flip the burger and toast the other side.  Lower the heat if necessary so the cheese inside gets nice and melty.
  4. Serve immediately with corn chips and extra guacamole!  Homemade salsa never hurts either.

*All of this can be done on the grill, adjusting the heat so the tortilla doesn’t burn!  Grill marks would be gorgeous!
